This is a play on your favorite brunch item, home fries. For this, I’m going to use Sweet Potatoes with a little red onion and mole powder for a delicious side dish. I like to use the sweet potato for this rather than regular potatoes as they complement the bolder flavors we will use with the mole powder. This is my favorite way to make sweet potatoes and it is the perfect side dish for a healthy breakfast.

The mole powder is a mixture of spices like Chili Powder, Cocoa Powder, and more… You will be able to find everything at your local big box grocery store. One note on the Cocoa Powder, Hershey’s does not work for this or anything. I prefer a different brand. Cocao Barry extra brute is my favorite for all recipes needing cocoa powder. It does come in a larger bag so make sure to have an extra airtight container on hand for storage.

To cook I use Avocado Oil rather than olive oil. It only needs a little oil, so if you don’t have Avocado oil that’s fine, use vegetable oil instead.

Using a sharp knife and a cutting board on a stable surface, Dice into 1/2″ sweet potato Chunks, leaving the skin on for maximum health benefits like Vitamin A, C, and E. If you want to cut these into sweet potato wedges rather than dice, this recipe will work as well. We will just need to adjust the cook for extra time for these long slices. Avoid cutting them into smaller pieces. The reason is it will throw off the ratio of spice to sweet potato, which should be heavier sweet potato than spice.

In a large bowl, toss the chunks with a bit of oil, like Avocado Oil, Mole Spice, and Kosher Salt

For best results and shorter cooking time, arrange them in a Single Layer on a baking pan. Roast at 425º for 15 minutes. The cook time will vary with each oven. The point of the high temperature and short cook time is to get a hard sear to form a bit of crust on the outside while the inside becomes soft.
